Ingredients

Meatballs

  • 2 cups Green Lentils (cooked)
  • 2 tbsp Quick Cooking Oats
  • 1 Yellow Onion (finely diced)
  • 1 bunch Fresh Parsley (finely chopped, save 1 tbsp for garnishing)
  • 1 tsp Tomato Paste
  • 1 tsp Smoked Paprika
  • 1 tsp Ginger (grated)
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Dijon Mustard
  • 2 tbsp Nutritional Yeast
  • 2 tbsp Almond Milk
  • 1 tbsp Lemon Juice (freshly squeezed)

For Frying

  • 1 tbsp Coconut Oil

Instructions

  1. Mix Ingredients: Add all the ingredients into a large bowl and use a fork to mash the lentils while mixing everything together. Alternatively, pulse 3 or 4 times in a food processor, ensuring the mixture is sticky and textured but not over-processed.
  2. Shape Meatballs: Using your hands, shape the mixture into small balls and arrange them on a plate to prepare for cooking.
  3. Heat Oil: Place a non-stick skillet on medium heat and add the coconut oil, allowing it to melt and heat through.
  4. Cook Meatballs: Add the lentil meatballs to the skillet one by one, being careful not to overcrowd the pan to ensure even cooking.
  5. Fry Until Golden: Cook the meatballs over medium heat, flipping gently with a wooden spoon, until they become crispy and golden brown on all sides.
  6. Garnish: Transfer the cooked meatballs to a serving bowl and garnish with the reserved fresh parsley for a burst of color and freshness.
