Ingredients

Dough

  • 1 cup warmed almond milk (or other vegan milk)
  • 2 Tablespoons sugar
  • 2 1/4 teaspoons active dry yeast (1 standard packet)
  • 1/4 cup oil (olive or avocado oil recommended)
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 3 cups all purpose flour (375 grams)
  • 1 1/2 teaspoons salt

Filling

  • 1 large onion, sliced
  • 4 cups spinach (loosely packed)
  • 2 Tablespoons vegan butter
  • Salt & pepper to taste
  • 2/3 cup tomato sauce
  • 810 leaves fresh basil (torn)
  • 12 Tablespoons nutritional yeast (optional)

Instructions

  1. Make The Pizza Dough 24-48 hours ahead of baking. Combine warmed almond milk and sugar in a mixing bowl and whisk. Add the yeast, whisk again, and let stand for 5 minutes to activate the yeast, checking for bubbles.
  2. Mix Dough Ingredients. Once the yeast is active, whisk in oil and pizza dough spices (oregano, garlic powder, basil). Gradually add flour along with salt, mixing until a thick dough forms.
  3. Knead the Dough. Using a stand mixer with a bread hook, knead until elastic and no longer sticky (about 5-7 minutes). If kneading by hand, turn dough out onto a floured surface and knead for 5-7 minutes until tacky but not sticky and stretchy without tearing.
  4. First Rise. Form dough into a ball, place into an oiled bowl, cover with plastic wrap, and refrigerate for 24-48 hours to allow slow fermentation and flavor development.
  5. Second Rise Preparation. One hour before shaping, remove dough from fridge, punch down, reform into a ball, and let rise at room temperature for 1 hour to reactivate the yeast and soften the dough.
  6. Caramelize Onions and Cook Spinach. Melt vegan butter in a large frying pan over low heat. Add sliced onions and cook gently for 20-30 minutes, stirring frequently, until soft, sweet, and browned. Add spinach to the pan and cook for 2 more minutes until wilted. Season with salt and pepper, then remove from heat.
  7. Preheat Oven. Set your oven to 375°F (190°C) to preheat for baking the rolls.
  8. Shape the Dough. Turn risen dough onto a well-floured surface. Roll dough into a 1/2-inch thick rectangle, dusting your rolling pin with flour.
  9. Add Fillings. Evenly spread tomato sauce over the dough, leaving a 2-inch border without filling. Spread the caramelized onion and spinach mixture on top, then sprinkle torn fresh basil leaves evenly.
  10. Roll and Seal the Dough. Starting from one side, roll the dough into a log, tucking the filling in as you go to prevent spilling. Pinch the seam tightly to seal, then flip the roll so the seam side is down.
  11. Cut and Prepare for Baking. Slice the log into 12 even pieces and place them cut side up in a greased 9 x 13 inch baking pan. Sprinkle with nutritional yeast if using.
  12. Bake the Rolls. Bake for 34-38 minutes until the rolls are golden brown on the outside yet soft and cooked through in the center.
