Ingredients

Protein and Vegetables

  • 1 tbsp Olive oil or avocado oil
  • 1.5 lbs Ground turkey
  • 1 small Sweet onion, diced
  • 1 Red bell pepper, diced
  • 1 Green bell pepper, diced

Seasonings and Sauces

  • 1 tbsp Italian seasoning
  • 2 tsp Smoked paprika
  • 1 tsp Sea salt
  • 2 (14.5 oz) cans diced tomatoes
  • 2 tbsp Tomato paste
  • 1 tbsp Worcestershire sauce

Grains and Dairy

  • 3 cups Beef or chicken broth
  • 1.5 cups Long grain white rice (like Jasmine rice)
  • 1 cup Shredded Monterey Jack cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the turkey and onion: Heat a large skillet over medium-high heat. Once hot, reduce the heat to medium and add the diced onion and ground turkey. Cook for 4-5 minutes, stirring occasionally, until the turkey is mostly cooked through and the onions become translucent.
  2. Add vegetables and seasonings: Add the diced red and green bell peppers, Italian seasoning, smoked paprika, and sea salt to the skillet. Stir to combine all ingredients well.
  3. Add liquids and rice: Pour in the diced tomatoes with their juices, tomato paste, Worcestershire sauce, and broth. Stir in the long grain white rice until evenly distributed.
  4. Simmer the mixture: Bring the skillet contents to a boil, then cover with a lid and reduce heat to a low simmer. Let cook for 20-25 minutes, stirring every 10 minutes to prevent the rice from settling and sticking to the bottom, until the rice is tender and has absorbed most of the liquid.
  5. Add cheese and melt: Once the rice is cooked, sprinkle the shredded Monterey Jack cheese evenly over the top. For best results, place the skillet under a broiler for a few minutes until the cheese is bubbly and slightly browned. Alternatively, cover with the lid and let the cheese melt on the stovetop.
