Dough

  • 1 ½ cups self-rising flour
  • 1 cup plain, nonfat Greek yogurt

Baking Soda Bath

  • ½ cup boiling water
  • 1 tbsp baking soda

Topping

  • ½ cup butter, melted
  • 1 tbsp pretzel salt

Instructions

  1. Prepare the dough: Preheat the oven to 425˚F. In the bowl of a stand mixer fitted with a dough hook, combine the self-rising flour and Greek yogurt. Mix on low speed until the ingredients just come together.
  2. Knead the dough: Increase the mixer speed to medium and knead the dough for about 3 minutes until it forms a smooth ball. If the dough feels too sticky, gradually add a bit more flour until manageable.
  3. Shape the dough: Lightly flour a clean surface and turn the dough out onto it. Sprinkle the top with flour and knead gently a few times. Form the dough into a single ball and then cut it into four equal wedges.
  4. Cut into segments: Roll each wedge into a long rope, then slice each rope into approximately 12 small pieces to form individual pretzel bites.
  5. Prepare baking soda bath: Dissolve the baking soda in the boiling water. Dip each dough piece briefly into this baking soda bath to give the pretzel bites their distinctive flavor and texture.
  6. Bake the bites: Arrange the soaked dough pieces on a baking sheet lined with parchment paper. Bake in the preheated oven for 7-10 minutes or until they turn golden brown.
  7. Finish and serve: Remove the pretzel bites from the oven and immediately brush them with melted butter. Sprinkle generously with pretzel salt and serve warm.
