Twix Cookie Cups are a delightful homemade treat featuring a soft sugar cookie base topped with creamy caramel and rich milk chocolate. This recipe captures the classic flavors of a Twix bar in a fun, bite-sized cookie form that’s perfect for dessert or sharing at parties.

Ingredients

Cookie Base

  • 1/2 cup (111g) salted butter
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder

Candy Topping

  • 20 caramels, unwrapped
  • 1 tbsp milk
  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cookie cups.
  2. Cream Butter and Sugar: In a mixing bowl, use a stand mixer to cream together 1/2 cup salted butter and 1/2 cup granulated sugar until the mixture is light and fluffy.
  3. Add Egg White and Vanilla: Beat in 1 egg white and 1 teaspoon vanilla extract until the ingredients are well combined.
  4. Incorporate Dry Ingredients: Add 1 1/2 cups all-purpose flour and 1 teaspoon baking powder to the wet mixture. Mix thoroughly until a soft dough forms.
  5. Roll Out Dough and Cut: Roll the dough out on a flat surface to a thickness of 1/4 to 1/2 inch. Use a round cookie cutter to cut circles from the dough and place them on an ungreased cookie sheet.
  6. Bake Cookies: Bake the cut cookies in the preheated oven for 6-8 minutes, or until they are puffy and no longer glossy. Remove from oven.
  7. Cool Cookies: Transfer the baked cookies to a wire rack and allow them to cool completely before adding toppings.
  8. Melt Caramels: While cookies cool, microwave 20 unwrapped caramels with 1 tablespoon milk for 1 minute, stirring halfway through until the mixture is smooth and creamy.
  9. Top Cookies with Caramel: Spoon a few teaspoons of the melted caramel onto each cookie, spreading it to almost cover the surface.
  10. Chill Caramel Layer: Place the cookies topped with caramel into the refrigerator for 10-15 minutes to allow the caramel to set and cool fully.
  11. Melt Chocolate Chips: Melt 2 cups milk chocolate chips in 30-second intervals in the microwave, stirring between intervals until completely melted and smooth.
  12. Apply Chocolate Topping: Spread a small amount of melted chocolate on top of each caramel-topped cookie. Allow the chocolate layer to cool and set before serving.

Notes

  • Ensure cookies are fully cooled before adding caramel to prevent melting and spreading.
  • Use a round cookie cutter slightly smaller than your cookie sheet spacing for even baking.
  • Stir the melted caramel frequently for a smooth consistency.
  • Store cookie cups in an airtight container in the fridge to keep caramel and chocolate layers firm.
  • For a dairy-free version, use dairy-free butter, caramel, and chocolate substitutes.
