Ingredients
Sandwich Ingredients
6 thick slices of Soft White Bread, crusts removed
2 x 5oz (145g) cans of Tuna Chunks, drained
1/3 cup (80g) Mayonnaise
1/2 Cucumber, sliced into thin rounds (about 27 slices)
1 1/2 tbsp finely diced Fresh Chives
2 tsp Fresh Lemon Juice, or to taste
1/4 – 1/2 tsp Cracked Black Pepper
Pinch of Salt, to taste
Butter, as needed for spreading
Instructions
Prepare Tuna Mayo: In a small mixing bowl, combine the drained tuna chunks, mayonnaise, finely diced fresh chives, fresh lemon juice, pinch of salt, and cracked black pepper. Stir well until all ingredients are evenly mixed. Taste the mixture and adjust seasoning as needed to balance flavor.
Assemble Sandwiches: Take each slice of white bread and spread butter evenly on one side. Place three slices of bread, buttered side down, on a clean surface. Spread the prepared tuna mayo evenly over these slices. Arrange the thin cucumber rounds on top of the tuna, overlapping slightly to cover the surface.
Complete Sandwich: Top each cucumber layer with the remaining slices of bread, buttered side up, to complete the sandwiches. Press down gently to secure the fillings.
Slice and Serve: Slice each sandwich into thirds for easy handling. Serve immediately and enjoy a fresh, delicious tuna cucumber sandwich perfect for a quick meal.
Notes
Use soft white bread for the best texture and bread-to-filling ratio.
Adjust lemon juice and seasoning according to your taste preference.
Thinly slicing cucumbers ensures they layer nicely without overpowering the sandwich.
You can substitute mayonnaise with a light yogurt for a lower fat option.
Serve immediately to prevent bread from becoming soggy.
