This tomato spinach chicken pasta recipe features tender pan-fried chicken in a creamy tomato spinach sauce, creating a delicious and satisfying meal perfect for busy weeknights.

Ingredients

Pasta:

  • 8 ounces uncooked pasta

Chicken:

  • 2 chicken breasts
  • 1/2 tablespoon garlic powder
  • Salt & pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Sauce:

  • 23 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 (14 ounce) can tomato sauce
  • 3/4 cup heavy/whipping cream
  • 1/4 teaspoon Italian seasoning
  • 2 cups (packed) fresh baby spinach
  • Freshly grated parmesan cheese for serving, to taste

Instructions

  1. Boil Pasta: Boil salted water and cook pasta al dente.
  2. Cook Chicken: Season chicken and cook until done; set aside.
  3. Make Sauce: Cook garlic, add tomato paste, tomato sauce, cream, and seasoning. Simmer.
  4. Combine: Cut chicken, add to sauce with spinach. Toss with cooked pasta.
  5. Serve: Top with parmesan cheese and serve.

Notes

  • I don’t recommend substituting the cream as it may cause the sauce to curdle due to the acidity of the tomatoes.
