Ingredients

Chicken

  • 2 small chicken breasts
  • 1 tablespoon olive oil (for chicken)
  • 1 tablespoon poultry seasoning (or salt, pepper, garlic powder mix)
  • 1 tablespoon olive oil (additional)

Bread and Topping

  • 1 Italian style loaf
  • 1 stick unsalted butter (melted for bread)
  • 1 tablespoon minced garlic (for bread butter mixture)
  • 1 tablespoon chopped parsley (for bread butter mixture)
  • 1 teaspoon crushed red pepper flakes

Alfredo Sauce

  • 1/2 stick unsalted butter
  • 1 tablespoon minced garlic (for sauce)
  • 1/2 cup heavy cream
  • 1/4 cup shredded parmesan cheese
  • 1 tablespoon chopped parsley (for sauce)

Toppings

  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Prepare and Cook the Chicken: Cut the chicken breasts into ½ inch pieces. Place them in a bowl, drizzle with 1 tablespoon olive oil, and season with 1 tablespoon poultry seasoning or a mix of salt, pepper, and garlic powder. Heat a pan over medium heat and cook the chicken pieces until they turn golden and are cooked through.
  2. Slice and Prepare the Bread: Slice the Italian loaf lengthwise in half. In a small bowl, combine 1 stick of melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes to make the garlic butter spreading mixture.
  3. Toast the Bread: Spread the garlic butter evenly on both halves of the sliced bread. Place the bread in a preheated oven at 350°F (175°C) and toast for 5-10 minutes, checking after 5 minutes, until the bread reaches the desired level of crispness.
  4. Make the Alfredo Sauce: Using the same pan used for the chicken, reduce heat to medium-low and add 1/2 stick of butter. Once melted, stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant. Lower the heat to low, then add 1/2 cup heavy cream, 1/4 cup shredded parmesan cheese, and 1 tablespoon chopped parsley. Simmer the sauce gently for 3-5 minutes, stirring continuously until it slightly thickens. Remove from heat.
  5. Assemble the Garlic Bread: Spread half of the prepared Alfredo sauce evenly over the toasted bread halves. Top with the cooked chicken pieces and sprinkle evenly with shredded mozzarella cheese. Drizzle the remaining Alfredo sauce over the top.
  6. Bake Until Cheese Melts: Return the assembled bread to the oven at 350°F and bake for an additional 5 minutes, or until the mozzarella cheese is fully melted and bubbly.
  7. Serve: Remove from oven, slice the bread into 2-3 inch pieces, and serve warm. Enjoy this indulgent and flavorful chicken Alfredo garlic bread!

Notes

  • You can substitute poultry seasoning with a blend of salt, pepper, and garlic powder if preferred.
  • Adjust crushed red pepper flakes according to your heat preference or omit for a milder flavor.
  • Use fresh garlic for better flavor, but garlic paste works as a convenient alternative.
  • Ensure the sauce is simmered gently on low heat to prevent curdling of cream.
  • Use Italian style loaf or any crusty bread that can hold toppings well without becoming soggy.
