  • 1 clove garlic, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 pinch cayenne pepper
  • 3/4 cup shredded Gruyere cheese
  • 3/4 cup shredded cheddar cheese
  • 6 russet or Yukon gold potatoes, sliced into 1/8-inch thick pieces

Instructions

  1. Preheat Oven: Preheat your oven to 350°F.
  2. Sauté Onions: In a skillet, melt butter and sauté onions until softened and lightly browned. Add garlic, thyme, salt, and pepper.
  3. Prepare Milk Mixture: Mix cream, milk, cayenne pepper, salt, and pepper in a measuring cup. Stir in Gruyere cheese.
  4. Layer Potatoes: In a buttered casserole dish, alternate layers of milk mixture, potatoes, and sautéed onions. Finish with milk mixture on top.
  5. Bake: Cover with foil and bake for 1 hour 45 minutes to 2 hours until potatoes are tender. Remove foil, add cheddar cheese, and bake until golden and melted.
