Cowboy Beans, also known as Calico Beans, are a hearty and flavorful dish that combines the richness of ground beef and a trio of beans. Ingredients

16 ounces lean ground beef

1 onion, diced

16 ounces can kidney beans, drained and rinsed

16 ounces can white beans, drained and rinsed

1 cup ketchup

¼ cup brown sugar

1 to 2 tablespoons liquid smoke

Optional: ½ cup barbecue sauce

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain and set aside.
  2. In the same skillet, cook the diced onion for 4 to 5 minutes, until softened.
  3. Transfer the cooked beef and onions to a 6-quart slow cooker.
  4. Add the kidney beans, white beans, ketchup, brown sugar, and liquid smoke to the slow cooker. Stir to combine.
  5. Optional: Stir in the barbecue sauce for added flavor.
  6. Cover and cook on low for 4 to 5 hours, stirring occasionally.
