Delicious and soft chocolate chip cookies made with whole wheat flour, oats, and ground flaxseed for a high-fiber, wholesome treat.

Ingredients

1/2 cup butter

3/4 cup dark brown sugar

1 egg

2 tsp vanilla extract

1 cup rolled oats

1 cup white whole wheat flour

1/2 cup ground flaxseed

1 tsp baking powder

1/4 tsp salt

1/23/4 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, beat the softened butter and dark brown sugar together until well combined. Add the egg and vanilla extract, mixing thoroughly.
  3. In a large bowl, mix rolled oats, white whole wheat flour, ground flaxseed, baking powder, and salt.
  4. Combine the wet ingredients with the dry ingredients until just mixed. Be careful not to overmix.
  5. Fold in the semi-sweet chocolate chips.
  6. Line two baking sheets with parchment paper or silicone mats. Scoop dough onto sheets, shaping into cookies as needed (about 20 cookies).
  7. Bake for about 8 minutes until tops are slightly golden brown.
  8. Cool on a wire rack. Cookies will be soft initially but firm up as they cool.
