  • 1/4 cup sugar (see notes)
  • 2 tablespoons white vinegar
  • 1 teaspoon salt
  • 3 dried chile de arbol peppers OR japones
  • 7 peeled garlic cloves
  • 1/4 cup water

Instructions

  1. Blend the ingredients: Place the sugar (or your chosen sweetener), white vinegar, salt, dried chile de árbol peppers, peeled garlic cloves, and water into a blender. Blend on medium-high speed until the mixture is smooth and well combined.
  2. Boil the sauce: Pour the blended mixture into a small saucepan and bring it to a boil over medium-high heat.
  3. Simmer and thicken: Once boiling, reduce the heat to low and let the sauce simmer for 10 minutes. Stir occasionally to prevent sticking. The sauce will thicken and become bubbly with foam on the surface. Once thickened, remove from heat and it’s ready to serve.

Notes

  • You can substitute sugar with honey or another sweetener if preferred.
  • Adjust the number of dried chile peppers to control the spiciness of the sauce.
  • This sauce pairs excellently with egg rolls but also works well as a dip for spring rolls or dumplings.
