Ingredients

Muffin Ingredients:

  • 2/3 cup white sugar
  • 1 large egg
  • 1/2 cup vegetable oil OR melted butter
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour (or gluten-free mix)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sour cream (or yogurt)
  • 1 cup blueberries
  • About 1 tablespoon white sugar for the top (optional)

Instructions

  1. Preheat oven to 375ºF. Lightly grease muffin tin and place eight liners in the pan.
  2. Combine sugar, egg, oil, milk, and vanilla in a bowl.
  3. Add flour, baking powder, and salt. Stir until just combined.
  4. Stir in sour cream, then fold in blueberries.
  5. Distribute batter in the muffin tin and sprinkle tops with sugar.
