Ingredients

Ground Beef:

  • 1 lb ground beef

Taco Seasoning:

  • 2 packets taco seasoning (2 oz total)

Cheese:

  • 6 oz Velveeta cheese, cubed

Tomatoes and Chilies:

  • 10 oz Rotel tomatoes with green chilies

Green Chilies:

  • 2 oz canned green chilies (use whole can for extra spice)

Black Beans:

  • ½ cup black beans, rinsed and drained

Corn:

  • ½ cup corn

Red Onion:

  • ¼ cup red onion, diced

Optional Toppings:

  • sour cream, salsa, fresh cilantro

Instructions

  1. Cook the Beef

    In a large skillet over medium-high heat, brown the ground beef. Drain excess grease if needed. Stir in both taco seasoning packets and prepare according to package directions for maximum flavor.

  2. Melt the Cheese

    Reduce heat to low. Add cubed Velveeta and stir until the cheese is completely melted into the beef mixture.
