Tater Tot Breakfast Casserole is a hearty and comforting breakfast dish featuring crispy tater tots, savory sausage, fluffy eggs, and gooey cheese, perfect for busy mornings or family gatherings.

Ingredients

1 pound regular or hot breakfast sausage, cooked and crumbled

30 ounces frozen tater tots

2 cups shredded Mexican blend cheese or cheddar cheese, divided

8 eggs

1 cup milk

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

½ teaspoon granulated garlic or garlic powder

½ teaspoon onion powder

Instructions

  1. Preheat your oven to 350ºF (175ºC). Grease a 9×13-inch baking dish with butter and set it aside.
  2. In a large skillet over medium-high heat, cook the breakfast sausage until browned and crumbled. Remove from heat and set aside.
  3. Spread the frozen tater tots evenly in the bottom of the prepared baking dish.
  4. Add the cooked sausage to the tater tots, followed by 1½ cups of shredded cheese. Stir to combine the ingredients.
  5. In a medium-sized bowl, whisk together the eggs, milk, salt, pepper, garlic, and onion powder.
  6. Pour the egg mixture over the tater tot and sausage mixture in the baking dish. Top with the remaining ½ cup of cheese.
  7. Bake the casserole for 55-60 minutes or until the eggs are set and the top is golden brown around the edges.
  8. Serve warm and enjoy!

  • For a vegetarian version, omit the sausage and add sautéed vegetables like bell peppers, mushrooms, or spinach.
  • To customize, swap the sausage with crumbled beef  or cooked ground turkey.
