A delightful fusion of Mexican and Italian flavors, this Taco Spaghetti is a cheesy, beefy dish that will please both pasta and taco lovers alike.

Ingredients

Spaghetti:

  • 1 pound spaghetti noodles

Taco Beef Mixture:

  • 2 pounds ground beef
  • ½ yellow onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 packet taco seasoning
  • 1 can (10 oz) tomatoes with green chilis (undrained)
  • 1 cup sour cream
  • 1 cup beef broth
  • 2 cups shredded Mexican blend cheese

Instructions

  1. Cook the Pasta: Cook spaghetti according to package directions. Drain and set aside.
  2. Sauté & Brown: In a large skillet, heat olive oil over medium-high. Add the onion and bell pepper, cooking for 3–4 minutes until soft. Add ground beef and cook until browned. Drain off any excess fat.
  3. Make it Saucy: Return the beef mixture to the skillet. Stir in the taco seasoning, tomatoes with green chilis (including the juice), beef broth, sour cream, and cheese. Mix well and simmer on low, stirring now and then, until everything’s creamy and the cheese is melted.
  4. Mix with Spaghetti: Add the cooked spaghetti to the skillet and toss so the noodles are fully coated in the taco sauce.
  5. Serve: Dish it up hot. Garnish with chopped cilantro or extra cheese if you like. Enjoy!
