This easy and simple Taco Soup is the perfect lunch or dinner. Made with turkey instead of ground beef, it’s a quick and delicious soup that the whole family can enjoy.

Ingredients

Main Soup:

  • 1 teaspoon mild flavored oil
  • 1 lb ground turkey (or ground beef or chicken)
  • 1 cup chopped onion
  • 2 garlic cloves, chopped
  • 24 tablespoons Easy Taco Seasoning or 1 package store-bought taco seasoning
  • 3 cups beef broth
  • 23 cups tomato juice (such as Campbell’s)
  • 1 can Rotel diced tomatoes and green chilies, not drained
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 2 cups frozen whole kernel corn

Toppings:

  • 1 cup shredded cheddar cheese
  • Sliced avocado
  • Sour cream
  • Tortilla strips

Instructions

  1. Cook the Meat: Add oil to a large pot over medium heat. Cook turkey, onion, and garlic until meat is no longer pink.
  2. Add Seasonings and Broth: Stir in taco seasoning. Add beef broth, tomato juice, Rotel, beans, and corn.
  3. Simmer: Simmer uncovered for at least 20 minutes. Cover and simmer longer if desired.
  4. Serve: Top with cheddar cheese, avocado, sour cream, and tortilla strips.

Notes

  • Ground beef or chicken can be used instead of turkey.
  • Low-sodium taco seasoning is recommended due to the salt content of canned ingredients.
  • Adjust the amount of tomato juice for desired consistency.
  • Soup can be simmered longer for enhanced flavor.
  • Various toppings can be used, such as tortilla chips, pico de gallo, or sliced avocado.
  • Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
