These Sweet Potato Pie Bars are a delightful twist on traditional pie, offering all the flavors you love in a convenient bar form. Perfect for fall gatherings or as a sweet treat any time of year.

Ingredients

For the crust:

  • 1½ cups graham cracker crumbs (or crushed vanilla wafers)
  • ½ cup melted butter
  • ¼ cup brown sugar

For the filling:

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • ½ cup brown sugar
  • 2 eggs
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt

For the topping (optional but amazing!):

  • Whipped cream or marshmallow fluff
  • Chopped pecans

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Make the crust: Mix graham cracker crumbs, melted butter, and brown sugar; press into pan and bake for 10 minutes. Cool slightly.
  3. Prepare the filling: Whisk together mashed sweet potatoes, brown sugar, eggs, evaporated milk, vanilla, cinnamon, nutmeg, and salt until smooth.
  4. Bake it up: Pour filling over crust, bake for 35-40 minutes until set. Cool completely.
  5. Top & serve: Add whipped cream, marshmallow fluff, or chopped pecans. Cut into bars and enjoy!

Notes

  • These bars can be refrigerated for up to 3 days.
  • For a nutty flavor, consider adding chopped pecans to the crust.
