This Sweet Chilli Halloumi Wrap is a flavorful and quick vegetarian meal featuring crispy fried halloumi coated in sweet chilli sauce, fresh cucumber and carrot, cooling tzatziki, and vibrant coriander, all wrapped in soft white wraps. Perfect for a light lunch or easy dinner, it combines spicy, tangy, and creamy elements with a satisfying texture.

Ingredients

Halloumi and Marinade

  • 225 g low fat halloumi, thinly sliced
  • 1 tbsp sweet chilli sauce
  • Red pepper flakes/chilli flakes, a pinch (optional)
  • 1 tbsp rapeseed oil
  • 1 clove garlic, minced

Tzatziki

  • 200 ml Greek yogurt
  • cucumber, grated
  • ½ lime, juiced
  • Salt, a generous pinch

Vegetables and Wraps

  • cucumber, thinly sliced
  • 1 carrot, grated or sliced into matchstick pieces
  • 2 heads baby gem lettuce (approx. 6 leaves)
  • 4 large white wraps
  • 1 bunch coriander

Instructions

  1. Marinate the Halloumi: Place the thinly sliced halloumi in a bowl and coat evenly with the sweet chilli sauce and a pinch of chilli flakes if you prefer some heat. Mix thoroughly to ensure all slices are covered. Let it marinate for at least 15 minutes, or up to 24 hours for more flavor.
  2. Cook the Halloumi: Heat the rapeseed oil in a non-stick frying pan over medium heat. Add the marinated halloumi slices and fry for about 2 minutes on each side until they turn golden brown. Add the minced garlic halfway through cooking to infuse flavor without burning.
  3. Prepare the Tzatziki: In a bowl, combine the Greek yogurt with the grated cucumber, fresh lime juice, and a generous pinch of salt. Mix well to create a creamy and tangy sauce.
  4. Assemble the Wraps: Lay out each wrap and spread a large dollop of the tzatziki in the center, spreading it evenly. Layer about 3 baby gem lettuce leaves, followed by a generous portion of thinly sliced cucumber and grated carrot. Top with several slices of sweet chilli halloumi.
  5. Finish and Serve: Optionally drizzle extra sweet chilli sauce and more tzatziki over the fillings. Garnish with fresh coriander leaves. Fold the wraps and serve immediately for a delicious, satisfying meal.

  • You can marinate the halloumi overnight to deepen the flavors.
