A simple, rustic Swedish Apple Cake with tender apples, warm spices, and a soft, buttery texture. Perfect for dessert, breakfast, or snack time!

Ingredients

Apples:

  • 3 medium apples (such as Granny Smith, Honeycrisp, or Braeburn), peeled, cored, and thinly sliced

Batter:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cardamom (optional)
  • 1/2 cup unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup plain yogurt or sour cream

Topping:

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9-inch round or square baking pan, lining it with parchment paper.
  2. Prepare Apples: Peel, core, and slice apples; set aside.
  3. Mix Dry Ingredients: In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  4. Prepare Batter: In another bowl, whisk melted butter, sugar, eggs, vanilla, and yogurt until smooth.
  5. Combine Batter: Gradually add dry ingredients to wet, stirring until just combined.
  6. Layer Batter and Apples: Spread half of batter in pan, layer with half of apples, then remaining batter and apples.
  7. Add Topping: Mix sugar and cinnamon, sprinkle over apples.
  8. Bake: Bake for 40–45 minutes until golden brown and a toothpick comes out clean.
  9. Cool and Serve: Cool in pan for 10–15 minutes, then slice and serve warm or at room temperature.
