A quick and easy recipe for delicious stuffed mushrooms filled with a creamy mixture of cream cheese, parmesan, garlic, and herbs, topped with crispy cheesy breadcrumbs. Perfect as an appetizer or snack, these baked stuffed mushrooms require minimal prep and bake in under 20 minutes.

Ingredients

Mushrooms

  • 22 oz white mushrooms (or brown)

Filling

  • 12 oz cream cheese (softened)
  • 2 Tbsp butter
  • 2 cloves garlic (1 tsp minced)
  • 0.15 oz parsley (a handful, finely chopped)
  • 0.07 oz thyme (1 Tbsp, finely chopped)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 oz parmesan cheese (1/3 cup grated)

Topping

  • 0.18 oz parmesan cheese (1 Tbsp grated)
  • 1 oz breadcrumbs (1/3 cup)

Garnish

  • Fresh parsley or thyme (to sprinkle)

Instructions

  1. Prepare the mushrooms: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly oil it. Clean the mushrooms gently with a damp cloth or paper towel. Remove the stems carefully, leaving a hollow bowl shape to be stuffed, and set the caps on the baking sheet with the cavity facing up. Keep the stems for the filling.
  2. Make the filling & topping: Finely chop the reserved mushroom stems, garlic, parsley, and thyme. In a large pan, melt butter over medium heat and sauté the mushroom stems with salt, pepper, and garlic until mostly cooked. Stir in the parsley and thyme and cook for another minute. Remove from heat.
  3. Combine filling ingredients: In a mixing bowl, blend the cooked mushroom stems with cream cheese and 1/3 cup grated parmesan until smooth and well combined. In a separate small bowl, mix together the remaining parmesan and breadcrumbs for the topping.
  4. Stuff and top the mushrooms: Spoon about ½ to 1 tablespoon of the cream cheese mixture into each mushroom cap depending on their size. Evenly distribute the breadcrumb and parmesan topping over the filled mushrooms.
  5. Bake the mushrooms: Place the stuffed mushrooms in the preheated oven and bake for 17-20 minutes until the mushrooms are tender and the breadcrumb topping is golden brown and crispy.
  6. Serve: Allow the stuffed mushrooms to cool for a few minutes after baking. Garnish with fresh parsley or thyme before serving. Enjoy warm as a savory appetizer or snack.
