Ingredients

Energy Ball Mixture

  • 1 cup Sunbutter
  • 1/4 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1/2 cup dried blueberries

Instructions

  1. Mix the base. In a large mixing bowl, whisk together the sunbutter, maple syrup, vanilla extract, cinnamon, and salt until the mixture is smooth and creamy, ensuring all ingredients are fully combined.
  2. Add the oats & blueberries. Stir in the rolled oats and dried blueberries until every oat and berry is evenly coated with the sunbutter mixture, forming a thick and sticky dough-like consistency.
  3. Scoop into balls. Using a small cookie scoop or spoon (approximately 1½ tablespoons), portion the mixture onto a parchment-lined baking sheet, forming small, uniform balls. You can enjoy them immediately or refrigerate for at least 30 minutes to let them firm up for a better texture.
