Ingredients

Dry Ingredients:

  • 1⅔ cups Flour
  • ½ tsp Baking Soda
  • 1 tsp Baking Powder

Wet Ingredients:

  • ¾ cup Butter – Softened
  • ⅔ cup Brown Sugar Alternative
  • ¼ cup Sugar Alternative – granular
  • 1 tsp Vanilla Extract
  • 1 Egg

Add-ins:

  • 1 cup Sugar Free Chocolate Chips
  • ¾ cup Sugar Free White Baking Chips
  • 1 cup Unsweetened Shredded Coconut (Toasted if possible)
  • 1 cup Walnuts – chopped

Instructions

  1. Prepare: Preheat oven to 375°F and line baking sheets with parchment paper or a baking mat.
  2. Dry Ingredients: Whisk together flour, baking soda, baking powder, and salt in a medium bowl.
  3. Cream: Using a mixer with a paddle attachment, beat butter and sugar alternatives until smooth. Add vanilla and egg, mixing until combined.
  4. Combine: Gradually add dry ingredients to the mixing bowl, mixing until just combined.
  5. Fold: Gently fold in chocolate chips, coconut, and walnuts until evenly distributed.
  6. Scoop: Drop cookie batter onto prepared baking sheets using a scoop or tablespoon.
  7. Bake: Bake for 8-10 minutes until edges are slightly crisp and cookies appear dry.
  8. Cool: Let cookies cool on the sheet for 5 minutes, then transfer to a rack to cool completely.
