Sugar Free Boston Cream Cookies, a delicious no added sugar recipe for a soft cookie base topped with Vanilla Cream and Chocolate.

Ingredients

Cookies:

  • 2 cups Flour
  • 1 tbsp Cornstarch
  • 1 tsp Baking Powder
  • ½ cup Butter, softened to room temperature
  • ¾ cup Sugar Alternative (granular sugar alternative that measures like sugar and can be baked with)
  • 1 tsp Vanilla Extract
  • ¼ cup Milk

Vanilla Cream:

  • 1 Sugar Free Pudding Mix
  • 1 cup Milk
  • 4 oz Whipped Topping (no added sugar or low sugar Cool Whip)

Chocolate Frosting:

  • 1 Sugar Free Chocolate Frosting, softened to room temperature

Instructions

  1. Prepare: Preheat oven to 350°F and prepare baking sheet for nonstick.
  2. Dry ingredients: Whisk flour, cornstarch, and baking powder in a medium bowl.
  3. Cream: Cream softened butter with sugar alternative, then mix in milk and vanilla extract.
  4. Combine: Add dry ingredients to mixing bowl and mix until dough forms.
  5. Bake: Use a medium cookie scoop to place dough on baking sheet. Bake for about 12 minutes until golden brown.
  6. Cool: Press an imprint into each cookie when out of the oven and allow to cool.
  7. Vanilla Cream: Whisk pudding mix with milk, then fold in whipped topping. Refrigerate for at least 30 minutes to set.
  8. Assemble: Fill cookie imprints with vanilla cream layer, top with chocolate frosting.
