Ingredients

Pretzel Dough:

  • 1 pound soft pretzel dough or pizza dough

Other Ingredients:

  • 1/4 cup baking soda
  • 1 egg, beaten
  • Pretzel salt, for sprinkling
  • 1 stick (1/2 cup) butter, melted
  • 8 ounces crumbled blue cheese
  • Fresh thyme or parsley, for serving

Instructions

  1. Cut and Rest the Dough: Cut the dough into 34 bite-size pieces, cover, and let rest for 5-10 minutes.
  2. Prep the Oven and Water: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Bring a large pot of water to a boil.
  3. Boil the Dough Bites: Add the baking soda to the boiling water. Boil the dough bites, about 10 at a time, for 30 seconds. Remove with a slotted spoon and place on the parchment-lined baking sheet.
  4. Prepare for Baking: Arrange the bites in a greased 12-inch baking dish. Brush with beaten egg, then drizzle melted butter over them. Sprinkle crumbled blue cheese on top.
