Ingredients

Salad:

  • 1 1/2 English cucumbers, halved and sliced (about 3 cups)
  • 2 cups rotisserie chicken, chopped
  • 1/4 cup cilantro, minced
  • 3 green onions, sliced
  • 1 jalapeno, seeded and diced
  • 1/4 red onion, diced
  • 1/2 red bell pepper, seeded and diced
  • 15.25 oz can sweet corn, drained

Dressing:

  • 1/2 cup plain Greek yogurt (2% or higher fat content)
  • 1/3 cup mayonnaise
  • 1 lime, juice and zest of
  • 1 clove garlic, finely minced or grated
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp each salt and freshly cracked pepper

Instructions

  1. Dry Cucumbers: Lay the cucumber slices on paper towels to absorb moisture. Let them dry while preparing other ingredients.
  2. Prepare Dressing: In a bowl, combine Greek yogurt, mayo, garlic, lime juice and zest, seasonings, salt, and pepper. Whisk until smooth.
  3. Combine Ingredients: In a large bowl, mix cucumbers, corn, chicken, and remaining salad ingredients. Add most of the dressing and mix well. Adjust with remaining dressing as needed.
  4. Serve: Chill the salad and store any leftovers in a sealed container. Before serving, toss the salad to mix any settled liquid.

Notes

  • Excess liquid may accumulate from cucumbers and yogurt when stored; discard before serving.
