Packed with natural sweetness from honey and optional strawberry jam, these bites are perfect for a nutritious boost anytime. Rolled in shredded coconut and crushed strawberries, they’re deliciously fruity and satisfying, making them ideal for a healthy energy snack or post-workout treat.

Ingredients

Dry Ingredients

  • 1 1/4 cup almond flour
  • 3/4 cup crushed freeze dried strawberries
  • 1/4 cup vanilla protein powder
  • 1/8 teaspoon salt

Wet Ingredients

  • 1/3 cup cashew butter
  • 1/4 cup honey
  • 2 tablespoons almond milk (plus more as needed)
  • 1 teaspoon vanilla extract
  • Optional: 1-2 tablespoons strawberry jam

For Rolling

  • Shredded coconut
  • Extra crushed freeze dried strawberries

Instructions

  1. Crush berries: Place the freeze-dried strawberries in a ziplock bag and crush them using a meat tenderizer, or alternatively pulse them in a food processor or blender until finely crushed.
  2. Mix dry ingredients: In a medium mixing bowl, whisk together the almond flour, crushed freeze dried strawberries, vanilla protein powder, and salt to combine evenly.
  3. Whisk wet ingredients: Add the cashew butter, honey, almond milk, and vanilla extract to the dry mixture and mix thoroughly until a smooth dough forms.
  4. Adjust dough consistency: If the dough feels too dry, add more almond milk a little at a time. If it’s too wet, incorporate additional crushed freeze dried strawberries until you achieve a scoopable consistency.
  5. Enhance flavor (optional): For a richer, sweeter taste, gently fold in 1-2 tablespoons of strawberry jam to the mixture.
  6. Scoop dough: Using a 1 to 1 1/2 tablespoon cookie scoop, portion the dough and form it into bite-sized balls.
  7. Roll the bites: Roll each ball in a mixture of shredded coconut and extra crushed freeze dried strawberries to coat evenly.
  8. Serve or chill: Enjoy the energy bites immediately or refrigerate them for a firmer texture before serving.

Notes

  • Freeze dried strawberries provide natural strawberry flavor without added moisture, keeping the bites dry and firm.
  • Cashew butter can be substituted with almond or peanut butter if preferred.
  • Use a vanilla protein powder that suits your dietary preferences (whey, plant-based, etc.).
  • Store energy bites in an airtight container in the refrigerator for up to one week.
  • Adjust sweetness by varying the amount of honey or strawberry jam according to taste.
