Ingredients

For the crust:

  • 1 1/2 sticks (6 ounces) unsalted butter, melted

For the cream cheese filling:

  • 8 ounces cream cheese, at room temperature
  • 3/4 cup granulated sugar
  • 1/8 teaspoon kosher salt
  • 2 cups cold heavy cream
  • 1 teaspoon vanilla extract or vanilla bean paste

For the strawberry topping:

  • 2 (3-ounce) boxes powdered strawberry gelatin
  • 2 cups boiling water
  • 1 pound fresh strawberries, thinly sliced (about 4 cups)
  • Whipped cream, for serving (optional)

Instructions

  1. Make the crust: Heat the oven to 400ºF. Process pretzels and granulated sugar in a food processor. Add melted butter and pulse to combine. Press into a baking pan and bake.
  2. Make the cream cheese filling: Beat cream cheese, granulated sugar, and salt until smooth. Beat in heavy cream and vanilla until stiff peaks form. Spread onto the crust and refrigerate.
  3. Make the strawberry topping: Whisk powdered strawberry gelatin and boiling water together. Scatter sliced strawberries over the cream cheese filling and pour the gelatin mixture over. Refrigerate until set.
