Ingredients

Crust and Crumble Topping:

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt, or to taste

Strawberry Layer:

  • 2 cups coarsely chopped fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Crust and Crumble Topping: Preheat oven to 350F. Line an 8-inch square pan with aluminum foil and spray with cooking spray. In a microwave-safe bowl, melt the butter. Add flour, oats, sugars, and salt; mix. Set aside 1 cup for topping. Press the rest into the pan.
  2. Strawberry Layer: In the same bowl, mix all strawberry layer ingredients. Spread over the crust. Top with reserved crumble. Bake at 350F for about 50 minutes. Let cool before slicing.
