  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt (or additional cream cheese or coconut cream)
  • 1 cup powdered sugar (or sugar-free alternative)

Fruit

  • 5 medium size strawberries, stems removed

Optional Flavoring

  • 1/4 tsp vanilla bean paste (optional)

Instructions

  1. Prepare the base: If using cream cheese, let it come to room temperature to ensure smooth blending. If using coconut cream, open the can and check that the cream is thick and creamy; avoid using cans with hard or flaky coconut cream as they will not yield a good mousse texture.
  2. Prepare the strawberries: Remove the stems from the strawberries. Puree the strawberries by blending or mashing until smooth.
  3. Blend all ingredients: Add the room temperature cream cheese or coconut cream, yogurt (or the chosen substitute), powdered sugar, and optional vanilla bean paste to the pureed strawberries. Blend everything until completely smooth using a food processor, blender, or hand mixer.
  4. Chill the mousse: Transfer the mousse mixture to serving dishes and refrigerate. The mousse will thicken considerably once chilled, enhancing its creamy texture.
