This Strawberry Jello Poke Cake is a delightfully light and moist dessert, bursting with vibrant strawberry flavor. Combining a classic white cake with a luscious strawberry Jello soak, topped with Cool Whip and fresh strawberries, it’s a perfect crowd-pleaser that requires minimal effort and time in the kitchen.

Ingredients

Cake

  • 1 box white cake mix

Jello Mixture

  • 1 3-ounce box strawberry Jello
  • 1 cup boiling water
  • ½ cup cold water

Topping

  • 1 8-ounce tub Cool Whip topping
  • Strawberries for garnish (optional)

Instructions

  1. Bake the Cake: Preheat your oven and bake the white cake mix in a 9×13-inch pan according to package instructions. Once baked, remove the cake from the oven and allow it to cool in the pan for 15 minutes.
  2. Poke the Cake: Using a fork, pierce the cake at half-inch intervals all over the surface to create holes for the Jello to seep into, ensuring maximum flavor infusion.
  3. Prepare the Jello: In a 2-cup glass measuring cup, combine the dry strawberry Jello with 1 cup boiling water. Stir vigorously for 2 minutes until fully dissolved. Then, mix in ½ cup cold water to cool the mixture slightly.
  4. Pour the Jello Over Cake: Carefully pour the prepared Jello evenly over the entire cake, making sure the liquid fills the holes created by poking. This will soak the cake and infuse it with the strawberry flavor.
  5. Chill the Cake: Refrigerate the cake for at least 3 hours to allow the Jello to set and fully permeate the cake.
  6. Frost and Garnish: Once chilled, spread the Cool Whip topping evenly over the cake. Garnish with fresh strawberries if desired, then keep refrigerated until serving.

Notes

  • Store the cake covered in the refrigerator for up to 3 days to maintain freshness.
  • For best results, use fresh strawberries as garnish to enhance flavor and presentation.
  • The cake flavors improve after chilling, so prepare it a few hours in advance if possible.
