A simple and refreshing Strawberry Icebox Cake made with just three ingredients: whipped topping, fresh strawberries, and graham crackers. This no-bake dessert layers creamy whipped topping with juicy strawberries and crunchy graham crackers, then chills to create a soft, delicious treat perfect for warm days or easy entertaining.

Ingredients

Whipped Topping

  • 8 to 12 oz (226g to 340g) whipped topping or whipped cream

Fruit

  • 1 to 1 1/2 lbs (454g to 681g) fresh strawberries, sliced (or other fresh berries like blueberries or blackberries)

Crackers

  • 18 full sheets of graham crackers

Instructions

  1. Prepare Strawberries: Rinse and dry the fresh strawberries thoroughly, then slice them evenly to ensure consistent layering.
  2. Base Layer of Whipped Topping: Spread a thin, even layer of whipped topping or whipped cream on the bottom of your serving dish to help the graham crackers stick and prevent them from sliding.
  3. First Graham Cracker Layer: Arrange a layer of full sheets of graham crackers over the whipped topping layer, covering the bottom of the dish completely.
  4. First Whipped Topping Layer: Spread a generous layer of whipped topping evenly over the graham crackers.
  5. First Strawberry Layer: Place an even layer of the sliced fresh strawberries on top of the whipped topping.
  6. Second Graham Cracker Layer: Add another layer of graham crackers over the strawberries, gently pressing down to hold the layers together.
  7. Second Whipped Topping Layer: Spread whipped topping over the graham crackers layer, which helps keep the crackers in place during assembly.
  8. Second Strawberry Layer: Add another layer of fresh sliced strawberries over the whipped topping.
  9. Final Graham Cracker Layer: Place a final layer of graham crackers on top of the strawberries.
  10. Final Whipped Topping Layer: Spread the remaining whipped topping over the last graham cracker layer for a creamy finish.
  11. Final Strawberry Layer: Top the cake with the remaining sliced strawberries for a fresh and colorful touch.
  12. Chill to Set: Cover the dish tightly with a lid or plastic wrap and refrigerate for at least 4 hours. This chilling time allows the graham crackers to soften and the flavors to meld together.
  13. Serve: Once chilled, cut the cake into 12 squares approximately the size of a graham cracker and serve chilled.

Notes

  • You can substitute strawberries with other fresh or mixed berries such as blueberries or blackberries.
  • Adjust the amount of whipped topping depending on how thick and creamy you prefer the layers.
  • Be sure to chill the cake for at least 4 hours to ensure the graham crackers soften and the layers meld properly.
  • This cake is best served cold and consumed within 2 days for optimal freshness.
  • If you want a dairy-free version, use a non-dairy whipped topping alternative.
