Ingredients

Cake Batter

  • 1 box (15.25 ounces) strawberry cake mix
  • 3 large eggs, room temperature
  • 1 cup water
  • ½ cup (109 g) vegetable oil

Cream Cheese Swirl

  • 1 package (8 ounces) cream cheese, softened
  • ½ cup (1 stick / 113 g) unsalted butter, melted
  • 2 ½ cups (312.5 g) confectioners’ sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 1 cup (166 g) diced strawberries, plus extra for garnish

Topping and Serving

  • 2 cups (364 g) white chocolate chips
  • Vanilla ice cream, for serving

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F (175°C). Spray a 9×13-inch baking dish thoroughly with cooking spray to prevent sticking.
  2. Mix Cake Batter: In a medium bowl, combine the strawberry cake mix, eggs, water, and vegetable oil. Stir until the batter is smooth and well combined. Pour this batter evenly into the prepared baking dish.
  3. Prepare Cream Cheese Mixture: In a separate large bowl, use a hand mixer to beat together the softened cream cheese, melted butter, confectioners’ sugar, vanilla extract, and kosher salt until creamy and smooth.
  4. Fold in Strawberries: Gently fold the diced strawberries into the cream cheese mixture, incorporating them evenly without breaking them down too much.
  5. Swirl Mixture into Batter: Dollop spoonfuls of the cream cheese mixture over the cake batter in the baking dish. Using a knife or skewer, swirl the cream cheese mixture into the batter to create a marbled effect.
  6. Add White Chocolate Chips: Sprinkle the white chocolate chips evenly over the top of the swirled batter to add sweetness and texture.
  7. Bake the Cake: Place the baking dish in the preheated oven and bake for 50-55 minutes, or until the cake center is set and a toothpick inserted comes out with moist crumbs but no raw batter.
  8. Serve: Remove the cake from the oven and let it cool slightly. Garnish with additional diced strawberries. Serve the cake warm, ideally with a scoop of vanilla ice cream on the side for a delightful contrast.

Notes

  • Use room temperature eggs and softened cream cheese for better mixing and texture.
  • Take care not to over-swirl the cream cheese mixture to maintain distinct marbling.
  • If desired, white chocolate chips can be slightly reduced or substituted with chopped nuts for crunch.
  • Ensure strawberries are diced uniformly to prevent sinking during baking.
  • For a richer flavor, vanilla ice cream is recommended as a serving accompaniment.
