These delightful Strawberry Cookies combine the sweet and tangy flavor of strawberries with a buttery, soft cookie base. Perfectly baked to golden edges and topped with a creamy powdered sugar glaze, they make for a charming treat that’s easy to prepare and perfect for any occasion.

Ingredients

Cookies

  • ¾ cup frozen strawberries
  • ⅔ cup cold unsalted butter, cut into cubes
  • ¾ cup granulated sugar
  • 2 cups all-purpose flour or gluten-free flour
  • 1 tsp baking powder
  • Pinch of sea salt

Glaze

  • ½ cup powdered sugar
  • 1 tsp milk

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a baking pan with parchment paper to ensure the cookies don’t stick and for easy cleanup.
  2. Thaw Strawberries: Microwave the frozen strawberries for 60 to 90 seconds until they are thawed and juicy. Keep the strawberry juice as it adds flavor and moisture to the dough; do not drain it.
  3. Cream Butter and Sugar: In the bowl of a stand mixer, combine the cold cubes of unsalted butter and granulated sugar. Beat on high speed for about 2 minutes until the mixture is well combined and fluffy.
  4. Add Strawberries and Juice: Add the thawed strawberries along with their juice into the butter and sugar mixture. Beat again to incorporate evenly throughout the batter.
  5. Add Dry Ingredients: Add in the flour, baking powder, and a pinch of sea salt. Stir gently until just combined, being careful not to overmix the dough.
  6. Scoop Dough: Use a cookie scoop or spoon to portion out balls of dough onto the prepared baking pan, spacing them evenly to allow for spreading during baking.
  7. Bake Cookies: Bake the cookies in the preheated oven for 9 to 10 minutes or until the edges are set and lightly golden. Remove from the oven and allow to cool completely on the pan.
  8. Prepare Glaze: While the cookies are cooling, combine the powdered sugar and milk in a small bowl. Stir until the mixture forms a smooth and creamy glaze.
  9. Glaze Cookies: Drizzle the glaze over the fully cooled cookies using a spoon or piping method. Allow the glaze to set before serving for the best texture and flavor.

Notes

  • You can substitute fresh strawberries for frozen if available, adjusting the moisture as needed.
  • For a gluten-free version, use a gluten-free all-purpose flour blend.
  • Ensure the butter is cold to help create a tender and flaky texture.
  • Be careful not to overbake; the cookies will firm up as they cool.
  • The glaze can be thickened or thinned by adjusting the amount of milk used.
