These strawberry cheesecake bites are a delightful treat that combines the lusciousness of creamy cheesecake with the freshness of chocolate-covered strawberries. They are quick to make and perfect for satisfying your sweet cravings.

Ingredients

Cheesecake Filling:

  • 1 package (8 ounces) cream cheese, softened
  • 1/3 cup confectioners’ sugar
  • 1/4 teaspoon vanilla extract

Strawberries and Topping:

  • 20 large fresh strawberries (about 11/2 pounds)
  • 1/4 cup semisweet chocolate chips
  • 1 teaspoon shortening
  • Graham cracker crumbs, optional

Instructions

  1. Prepare Cheesecake Filling: In a mixing bowl, beat cream cheese, confectioners’ sugar, and vanilla extract until smooth.
  2. Prep Strawberries: Remove stems from strawberries. Cut a 1-inch-deep opening in the stem end of each strawberry using a paring knife or melon baller.
  3. Fill Strawberries: Pipe or spoon the cream cheese mixture into the openings of the strawberries.
  4. Top with Chocolate: Melt chocolate and shortening in the microwave, then drizzle it over the filled strawberries.
  5. Optional Finish: Sprinkle with graham cracker crumbs if desired.
  6. Chill and Serve: Place the strawberries on a wax paper-lined baking sheet and refrigerate until the chocolate sets.
