Delicious and nutritious Strawberries and Cream Energy Balls made with raw cashews, Medjool dates, cashew butter, and freeze-dried strawberries for a naturally sweet and creamy treat. These no-bake, easy-to-make energy balls are perfect for a quick snack or a healthy bite on the go.

Ingredients

Dry Ingredients

  • 2 cups raw cashews
  • 6 pitted Medjool dates
  • 3/4 cup unsweetened shredded coconut, divided
  • 1 Tbsp hemp seeds or chia seeds
  • 1/4 tsp sea salt
  • 1/3 cup freeze-dried strawberries

Wet Ingredients

  • 1/3 cup creamy cashew butter
  • 3 Tbsp pure maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Blend the cashews: Place the 2 cups of raw cashews in a blender and blend until they are finely chopped to form a crumbly base.
  2. Add main ingredients and blend: Add the 6 pitted dates, 1/4 cup of the shredded coconut, cashew butter, pure maple syrup, chosen seeds (hemp or chia), vanilla extract, and sea salt. Blend until the mixture is well combined and starts to clump together.
  3. Incorporate freeze-dried strawberries: Add the 1/3 cup freeze-dried strawberries to the mixture and blend briefly until they are evenly dispersed throughout. Stop occasionally to scrape down the sides and manually mix to prevent over-blending.
  4. Shape into balls: Transfer the mixture into a bowl. Using a small cookie scoop or tablespoon, measure out 24 equal portions and roll each portion into a ball with your hands.
  5. Coat in shredded coconut and chill: Spread the remaining 1/2 cup shredded coconut on a plate. Roll each energy ball in the coconut to coat evenly. Place the balls in the refrigerator and chill for about 30 minutes until firm.

Notes

  • If you prefer not to have the coconut coating, you can omit the rolling step or substitute with crushed nuts or seeds.
  • Make sure the dates are soft and moist for easier blending—soaking them in warm water for 10 minutes can help if they are dry.
  • Store energy balls in an airtight container in the refrigerator for up to one week or freeze for longer storage.
