Toffee Sauce

  • 2 tablespoons double cream
  • 2 tablespoons dark brown sugar (20g)
  • Pinch of sea salt
  • 2 tablespoons butter, melted (28g)

Instructions

  1. Prepare: Lightly grease two microwave-safe mugs to prevent sticking and set aside.
  2. Whisk wet ingredients: In a medium bowl, whisk together the egg, double cream, molasses sugar, and vanilla extract until combined. Gradually whisk in the slightly cooled melted butter for a smooth mixture.
  3. Mix dry ingredients: In a separate bowl, combine the all-purpose flour, baking powder, and a pinch of sea salt.
  4. Fold ingredients: Stir the dry ingredients into the wet ingredients gently until just combined. Carefully fold the chopped medjool dates into the batter to distribute evenly without overmixing.
