Ingredients

Meatballs

  • 1 lb. ground beef
  • 1/2 cup breadcrumbs
  • 1/3 cup onion, finely chopped
  • 1 tablespoon green onions, finely chopped (plus more for garnish)
  • 1 egg
  • 2 tablespoons soy sauce
  • 1/2 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Honey Garlic Sauce

  • 1/4 cup rice vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons liquid honey
  • 1 tablespoon garlic, minced
  • 1/2 tablespoon cornstarch (or flour)
  • 2 tablespoons water

For Garnish

  • Sesame seeds
  • Additional green onions, sliced

Instructions

  1. Prepare the Meatballs: In a large mixing bowl, combine ground beef, breadcrumbs, finely chopped onion, green onions, egg, soy sauce, brown sugar, garlic powder, salt, and black pepper. Mix thoroughly until the mixture is uniform and can be shaped easily.
  2. Shape the Meatballs: Take approximately two spoonfuls of the beef mixture and roll into 1.5-inch meatballs. Place the meatballs evenly spaced on a large half sheet baking pan lined with parchment paper. Lightly oil the parchment paper if needed to prevent sticking.
  3. Bake the Meatballs: Preheat the oven to 400°F (204°C). Bake the meatballs for 15 minutes or until they reach an internal temperature of 160°F (71°C) ensuring they are fully cooked through. Remove from oven and set aside.
  4. Mix the Sauce Ingredients: In a medium bowl, whisk together rice vinegar, brown sugar, soy sauce, honey, minced garlic, cornstarch, and water until sugar and cornstarch dissolve and the mixture is smooth.
  5. Cook the Sauce: Pour the sauce mixture into a shallow saucepan and heat over medium heat. Stir continuously for 3-4 minutes until the sauce thickens to a sticky and glossy consistency.
  6. Coat the Meatballs: Add the baked meatballs to the saucepan with the honey garlic sauce. Toss gently but thoroughly to coat each meatball evenly with the sauce.
  7. Serve: Transfer the sauced meatballs to a serving dish. Garnish with additional sliced green onions and sesame seeds. Serve hot, either on their own or over steamed or fried rice for a complete meal.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs and soy sauce.
  • Check meatball internal temperature with a thermometer to ensure proper cooking.
  • Honey can be adjusted to taste for desired sweetness.
  • If sauce thickens too much, add a little water to loosen consistency.
  • Leftover meatballs can be refrigerated for up to 3 days or frozen for longer storage.
