Spinach and cheese manicotti is a delicious baked pasta dish filled with a flavorful blend of seasoned cheeses and spinach, all nestled inside tender manicotti tubes and smothered in a savory tomato sauce. It’s a comforting and satisfying meal that the whole family will enjoy.

Ingredients

Manicotti Pasta:

  • 8 oz Manicotti Pasta, cooked until al dente

Cheese Filling:

  • 2 cups Ricotta Cheese
  • 3 cups Mozzarella Cheese, hand shredded
  • 1 cup Parmesan Cheese, grated
  • 1 Egg
  • 1/4 cup Frozen Chopped Spinach, thawed and drained well
  • Salt and Pepper to taste
  • 1 tbsp Garlic Powder
  • 1 tsp Oregano
  • 1 tbsp Italian Seasoning

Sauce:

  • 3 cups Tomato Sauce (homemade or jarred)

Instructions

  1. Preheat the oven to 350°F:
  2. Line a 9 x 13” baking dish with 2 cups of the tomato sauce.

  3. Prepare the Cheese Filling:
  4. In a large bowl, combine ricotta, 2 cups of mozzarella, Parmesan, egg, spinach, salt, pepper, garlic powder, Italian seasoning, and oregano. Mix until well combined.

  5. Fill the Manicotti:
  6. Stuff the manicotti with the cheese and spinach mixture using a spoon.

  7. Bake:
  8. Arrange the stuffed manicotti in the baking dish. Top with remaining sauce and mozzarella. Bake for 20-30 minutes until bubbly.

  9. Serve:
  10. Let cool slightly, garnish with parsley if desired, and serve warm. Enjoy!
