This Spicy Salmon Sushi Bake is a delicious and easy-to-make dish that combines fluffy sushi rice, flavorful salmon, creamy and spicy mayo, and fresh toppings like avocado and cucumber. Perfect as a comforting family meal or party appetizer, it features a crispy top layer baked to perfection and served with nori sheets for a sushi-inspired experience.

Ingredients

Sushi Rice

  • 1 cup sushi rice
  • 1/4 cup rice wine vinegar
  • 2 tsp sugar
  • 1 tsp salt
  • 1/2 cup furikake seasoning

Salmon Mixture

  • 8 oz salmon fillets (2 portions)
  • 1 tbsp soy sauce (gluten free if needed or use tamari)
  • 1/4 cup cream cheese (softened)
  • 1/4 cup mayonnaise (Kewpie or regular mayonnaise)
  • 2 tbsp sriracha sauce (or sambal oelek)

Toppings & Serving

  • 1 avocado (sliced or cubed)
  • 1/2 cucumber (sliced or cubed)
  • 2 green onions (sliced)
  • Nori seaweed sheets
  • More Kewpie mayonnaise
  • Unagi sauce

Instructions

  1. Prepare Sushi Rice: Rinse the sushi rice thoroughly under cold water using a fine meshed sieve until the water runs clear, then cook according to the package instructions, usually about 20 minutes.
  2. Season Rice: Once cooked, sprinkle the rice wine vinegar, sugar, and salt evenly over the rice and gently fold together with a rice paddle or spatula to combine without mashing the grains.
  3. Season Salmon: Rub the salmon fillets with the soy sauce to season them evenly, enhancing the flavor before cooking.
  4. Cook Salmon: While the rice cooks, air fry the salmon fillets at 400°F for 10 minutes or bake in the oven at 400°F for 15-20 minutes depending on thickness until just cooked through.
  5. Prepare Salmon Mixture: Flake the cooked salmon into small pieces using a fork, then combine in a large bowl with softened cream cheese, mayonnaise, and sriracha sauce until well mixed.
  6. Preheat Oven and Prepare Pan: Preheat your oven to 425°F. Line a 9×9″ baking dish with parchment paper or grease it with cooking spray to prevent sticking.
  7. Assemble Bake: Press the seasoned sushi rice evenly into the bottom of the prepared baking dish and sprinkle the furikake seasoning evenly over the rice.
  8. Add Salmon Layer: Spread the spicy salmon mixture evenly over the rice layer in the baking dish.
  9. Bake: Bake the sushi bake in the oven for 15 minutes or until it’s heated through and bubbling slightly.
  10. Add Toppings: Drizzle extra mayonnaise over the top, then garnish with sliced green onions, avocado, and cucumber for freshness and texture.
  11. Serve: Cut into squares and serve warm with nori seaweed sheets and a drizzle of unagi sauce to replicate the sushi hand roll experience.

Notes

  • Use Kewpie mayonnaise for authentic flavor, but regular mayonnaise works as well.
  • Adjust the amount of sriracha to control the heat level.
  • The bake can be assembled ahead of time and refrigerated before baking.
  • Make sure not to overcook the salmon to keep it moist.
  • Furikake seasoning adds umami and texture but can be substituted with sesame seeds and seaweed flakes.
