Ingredients

Spaghetti Pie Base

  • 6 oz spaghetti noodles (cooked and drained)
  • 2 eggs (beaten)
  • 1/4 cup parmesan cheese
  • 2 tbsp butter

Vegetable and Sour Cream Layer

  • 1/3 cup onion (chopped)
  • 1/4 cup green pepper (chopped)
  • 1/4 cup fresh mushrooms (sliced)
  • 1 cup sour cream

Meat Sauce

  • 1 lb Italian sausage (or ground beef)
  • 6 oz tomato paste (canned)
  • 1 cup water
  • Herbs or fresh garlic (optional, to taste)

Topping

  • 1 cup mozzarella cheese (sliced or grated)

Instructions

  1. Preheat Oven: Set your oven to 350 °F (175 °C) and lightly coat a 10-inch pie plate with non-stick cooking spray to prevent sticking.
  2. Cook Spaghetti: Break the spaghetti noodles in half for easier layering. Boil them in salted water until they are almost fully cooked, about 1 to 2 minutes less than the package directions recommend. Drain and set aside.
  3. Sauté Vegetables: In a skillet, melt the butter over medium heat. Add the chopped green pepper, onion, and mushrooms. Sauté the vegetables just until they begin to soften but are still slightly crisp. Remove the vegetables from the skillet to a small bowl to cool slightly. Stir in the sour cream to create a creamy vegetable mixture.
  4. Prepare Meat Sauce: Using the same skillet, brown the Italian sausage over medium heat until fully cooked. Drain excess fat. Stir in the tomato paste and water. Add garlic or herbs if desired. Allow the sauce to simmer uncovered for 10 minutes so flavors meld and sauce slightly thickens.
  5. Assemble the Pie: In a mixing bowl, combine the cooked spaghetti noodles, beaten eggs, and parmesan cheese thoroughly. Press this mixture firmly into the bottom and up the sides of the prepared pie plate, forming a crust-like base.
  6. Layer Sauces: Spread the sour cream and vegetable mixture evenly over the spaghetti crust in the pie plate. Spoon the meat sauce over the sour cream layer, distributing it evenly.
  7. Bake the Pie: Place the pie plate in the preheated oven and bake for 25 minutes to heat through and set the layers.
  8. Add Cheese and Finish Baking: Remove the pie from the oven, sprinkle the top with sliced or grated mozzarella cheese. Return the pie to the oven and bake a few more minutes until the cheese is melted and bubbly.
