Snickerdoodle Cobbler is a warm and gooey dessert combining the cinnamon-sugar flavors of snickerdoodle cookies with the comforting texture of a cobbler, featuring a caramel-like sauce formed during baking.

Ingredients

1/2 cup (1 stick) unsalted butter, melted

2 1/2 cups all-purpose flour

1 cup packed light brown sugar

1 1/2 teaspoons baking powder

1/2 teaspoon kosher salt

1 1/4 cups whole milk

1 teaspoon pure vanilla extract

1 cup granulated sugar

2 teaspoons ground cinnamon

1 1/2 cups hot water

Vanilla ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Pour melted butter into the bottom of a 13×9-inch baking dish.
  3. In a large bowl, whisk together flour, brown sugar, baking powder, and salt.
  4. Stir in milk and vanilla extract until just combined.
  5. Gently spoon the batter over the melted butter in the baking dish without mixing.
  6. Mix granulated sugar and cinnamon in a small bowl and sprinkle evenly over the batter.
  7. Slowly pour the hot water over the top without stirring.
  8. Bake for 40-45 minutes, until the top is golden brown and set.
  9. Cool slightly before serving. Top with vanilla ice cream if desired.
