A quick and delicious recipe for smashed avocado on toasted sourdough bread, topped with tangy crumbled feta, everything bagel seasoning, and fresh pea sprouts. Perfect for a nutritious breakfast or light lunch.

Ingredients

Bread and Oil

  • 4 thick slices sourdough bread
  • 1 tablespoon olive oil

Avocado Mixture

  • 23 ripe avocados
  • 1 lemon (juice only)
  • Salt and pepper to taste

Toppings and Garnish

  • 40 grams feta cheese, crumbled
  • Everything bagel seasoning, to sprinkle
  • Pea sprouts, for garnish

Instructions

  1. Toast the Bread: Drizzle the olive oil evenly over the sliced sourdough bread. Place the slices on a tray under the grill and toast them until golden brown. Turn the slices over and toast the other side until also golden and crisp.
  2. Prepare Avocado Mixture: Peel the avocados and roughly chop them into chunks. Place the chunks in a bowl and mash gently with a fork until chunky. Season with salt, pepper, and a generous squeeze of fresh lemon juice. Mix well and taste to adjust seasoning as needed.
  3. Assemble the Toast: Pile the mashed avocado mixture onto each toasted bread slice. Sprinkle crumbled feta cheese evenly over the avocado. Add a light sprinkle of everything bagel seasoning on top for extra flavor. Garnish each slice with fresh pea sprouts.
  4. Serve: Serve the smashed avocado toast immediately, accompanied by extra lemon wedges for an optional bright citrus squeeze.
