This Slow Cooker Street Corn Dip is a creamy, flavorful appetizer inspired by Mexican street corn. It combines sweet corn, spicy green chiles, creamy cheeses, fresh lime juice, and a hint of Tajin seasoning, slow-cooked to perfection for a warm, melty dip that’s perfect for parties or game day gatherings.

  • 1 (4-ounce) can diced green chiles
  • 8 ounces cream cheese
  • 1 cup shredded pepperjack cheese
  • ⅓ cup sour cream
  • 3 tablespoons finely diced red onion
  • ¼ cup chopped fresh cilantro (additional for topping, if desired)
  • 2 tablespoons fresh lime juice (about 12 limes)
  • 1 tablespoon Tajin (additional for topping, if desired)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Toppings

  • 1 cup crumbled cotija cheese, or queso fresco (more or less for topping)
  • Additional fresh cilantro for topping (optional)
  • Additional Tajin for topping (optional)

Instructions

  1. Add Ingredients: Place 4 cups frozen corn, 1 (4-ounce) can diced green chiles, 8 ounces cream cheese, 1 cup shredded pepperjack cheese, ⅓ cup sour cream, 3 tablespoons finely diced red onion, ¼ cup chopped fresh cilantro, 2 tablespoons fresh lime juice, 1 tablespoon Tajin, ½ teaspoon garlic powder, ½ teaspoon salt, and ¼ teaspoon ground black pepper into the bowl of a greased slow cooker.
  2. Cook: Cover the slow cooker and cook the mixture on LOW heat for 2 to 3 hours, stirring once or twice during cooking to blend the flavors and ensure even heating.
  3. Top: Once cooking is complete, set the slow cooker to the WARM setting. Sprinkle 1 cup crumbled cotija cheese or queso fresco over the dip, and add additional fresh cilantro and Tajin on top if desired.
  4. Serve: Serve the dip warm with tortilla chips for dipping, perfect for sharing as an appetizer or party snack.
