Ingredients

Chicken and Seasoning

  • 2 pounds boneless skinless chicken breasts
  • 1 (1-oz) package taco seasoning

Additional Ingredients

  • 1 (10-oz) can Rotel diced tomatoes and green chilies
  • 1½ cups Mexican cheese dip (refrigerated or jarred)
  • Tortillas or hard taco shells, for serving
  • Favorite taco toppings (such as lettuce, sour cream, salsa, avocado, cilantro, or jalapeños), for serving

Instructions

  1. Prepare the slow cooker: Place the boneless skinless chicken breasts into a 6-quart slow cooker. Evenly sprinkle the taco seasoning over the chicken, then pour the can of Rotel diced tomatoes with green chilies on top to add moisture and flavor.
  2. Cook the chicken: Cover the slow cooker with its lid and cook the chicken on LOW heat for 4 to 6 hours, allowing it to become tender enough to shred easily.
