A sweet and smoky pulled chicken recipe made in a slow cooker with cherry cola, perfect for BBQ sliders, enchiladas, tostadas, or chicken salad. Freeze half for later if needed!

Ingredients

Ingredients for Slow-Cooker Cherry Cola Pulled Chicken:

  • 2 pounds of boneless frozen chicken (1 pound breast, 1 pound boneless thigh–or any combo you like)
  • 1/2 cup chopped onion
  • 1 (4 oz) can chopped green chiles
  • 1 can Zevia Cherry Cola
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Smoked Paprika
  • 1 Tablespoon Chipotle in Adobo sauce (no peppers)
  • 1.5 cups frozen peaches
  • BBQ sauce, optional (for serving)

Instructions

  1. Prepare the Slow-Cooker: Turn your slow-cooker to low for 8-10 hours. Cover the inside pot with cooking spray.
  2. Add Ingredients: Add onions and green chiles to the bottom of the slow cooker. Place frozen chicken on top, then add the spices. Pour Zevia cherry cola over the chicken, and add peaches and chipotle in adobo sauce.
  3. Cook: Cover and cook on low for 8-10 hours.
  4. Shred the Chicken: Once cooked, ladle off 1-1.5 cups of cooking liquid. Shred the chicken using tongs or forks.
  5. Serve: Serve the pulled chicken as is, or with BBQ sauce.

Notes

  • This pulled chicken is versatile and can be used in various dishes like sliders, enchiladas, tostadas, or salads.
  • You can freeze half of the cooked chicken for later use.
