These Slow-Cooker Buffalo Chicken Sliders are a crowd-pleasing, easy-to-make recipe perfect for game day or casual gatherings. Tender chicken breasts are slow-cooked in butter, garlic, buffalo sauce, and ranch seasoning until juicy and flavorful, then shredded and served on soft slider buns with cheddar cheese, green onions, and your choice of ranch or blue cheese dressing for a spicy, creamy finish.

Ingredients

Chicken Mixture

  • 2 pounds boneless skinless chicken breasts
  • 3 tablespoons salted butter, cut into pieces
  • 2 garlic cloves, minced
  • 1 tablespoon dry ranch dressing mix
  • 2/3 cup buffalo sauce (e.g., Frank’s Red Hot)

Assembly

  • 1 dozen soft dinner rolls or sweet Hawaiian rolls
  • 8 ounces cheddar cheese, shredded
  • 6 green onions, sliced
  • 1 cup ranch or blue cheese dressing
  • More buffalo sauce, optional (for extra spice)

Instructions

  1. Prepare the Slow Cooker: Place the pieces of salted butter into the bottom of the slow cooker to melt and coat the chicken as it cooks.
  2. Layer the Chicken: Arrange the boneless skinless chicken breasts on top of the butter in the slow cooker. Spread the minced garlic evenly over the chicken breasts.
  3. Add Seasonings and Sauce: Pour 2/3 cup of buffalo sauce over the chicken breasts. Sprinkle the dry ranch dressing mix evenly on top to infuse the flavors.
  4. Cook the Chicken: Cover the slow cooker with its lid and cook on low heat for 6 to 7 hours or on high heat for 3 to 4 hours until the chicken is tender and fully cooked.
  5. Shred and Mix: Using two forks, shred the cooked chicken directly in the slow cooker. Stir well to combine the shredded chicken with the buttery, buffalo, and ranch sauce mixture for maximum flavor.
  6. Assemble the Sliders: Place a generous amount of the buffalo chicken mixture onto the bottom halves of the soft dinner or Hawaiian rolls. Top with shredded cheddar cheese, sliced green onions, and a drizzle of ranch or blue cheese dressing.
  7. Add Extra Sauce and Serve: Add additional buffalo sauce if desired for more heat, then place the top halves of the rolls to complete the sliders. Serve immediately while warm and enjoy!

Notes

  • You can prepare the chicken mixture a day ahead and reheat before assembling the sliders for convenience.
  • For spicier sliders, increase the amount of buffalo sauce to taste or add cayenne pepper to the seasoning mix.
  • Substitute the cheddar cheese with pepper jack for an extra kick or mozzarella for a milder flavor.
  • These sliders are great for parties and can be kept warm in the slow cooker on a low setting for serving.
  • Consider adding sliced pickles or celery sticks on the side for added crunch and freshness.
