Ingredients

Meat and Seasoning

  • 2 pounds beef stew meat
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons all purpose flour
  • 2 tablespoons olive oil

Vegetables

  • 1 ½ pounds baby potatoes, sliced in half
  • 5 medium carrots, peeled and cut into large pieces
  • 2 medium celery ribs, cut into thirds
  • 3 cloves garlic, minced
  • 1 cup frozen peas (optional)

Flavorings and Liquids

  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 envelope Lipton Onion Soup Mix
  • 3 cups beef broth

Instructions

  1. Prepare the Meat: Pat the beef stew meat dry with paper towels to remove excess moisture. Place it in a large bowl.
  2. Season and Coat: Season the beef with sea salt and ground black pepper. Toss the meat with all-purpose flour until evenly coated to help with browning and thickening the stew later.
  3. Sear the Meat: Heat olive oil in a large skillet over medium-high heat. In batches if needed, sear the beef on all sides until browned. This step locks in flavor. Transfer the browned meat to a clean plate.
  4. Deglaze the Skillet: Pour a small amount of beef broth into the hot skillet to deglaze, scraping up all browned bits from the bottom. Pour this flavorful liquid and bits into the slow cooker.
  5. Combine Ingredients in Slow Cooker: Add the baby potatoes, carrots, celery, seared beef, garlic powder, minced garlic, Lipton Onion Soup Mix, Worcestershire sauce, tomato paste, and remaining beef broth into the slow cooker. Stir gently to combine all ingredients.
  6. Cook the Stew: Cover with the slow cooker lid and cook on high for 4 to 5 hours or on low for 6 to 8 hours until the beef and vegetables are fork tender.
  7. Add Peas: If using frozen peas, stir them into the stew during the last 30 minutes of cooking to heat through without overcooking.
  8. Serve: Once cooked, serve the beef stew hot for a delicious, satisfying meal.
