This Slow Cooker Apple Crisp is a warm and comforting dessert featuring tender Granny Smith apples baked under a crunchy, buttery oat, pecan, and cinnamon topping. Prepared in a slow cooker for convenience, it delivers a perfectly soft fruit base with a delightfully crisp topping, making it an ideal dessert for cozy nights or when you want a hands-off sweet treat.

Ingredients

Filling

  • 8 large Granny Smith Apples, peeled and sliced to approx 1/4 inch
  • 1/3 cup brown sugar
  • 2 teaspoons ground cinnamon

Topping

  • 1 1/2 cup old fashioned oats (not quick cooking)
  • 1 cup brown sugar
  • 1 cup chopped pecans (walnuts or almonds will work as well)
  • 3/4 cup all purpose flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons melted butter

Instructions

  1. Prepare Apples: Peel and core your apples, then slice them into 1/4 inch thick slices. Keeping the slices a bit thicker helps prevent them from overcooking during the slow cooking process.
  2. Layer Filling: Place the sliced apples into the slow cooker. Sprinkle the 1/3 cup brown sugar and 2 teaspoons ground cinnamon evenly over the apples to season the fruit base.
  3. Make Topping: In a separate medium-sized bowl, combine the old fashioned oats, 1 cup brown sugar, chopped pecans, all-purpose flour, 2 teaspoons cinnamon, and salt. Stir well, ensuring no visible flour remains. Mix in the melted butter until all ingredients are incorporated, creating a crumbly topping mixture.
  4. Assemble Crisp: Evenly pour and spread the topping mixture over the apples in the slow cooker.
  5. Cover with Paper Towels: Cover the slow cooker pot with a doubled layer of paper towels, making sure it does not sag in the middle and touch the topping. This helps absorb moisture and prevents sogginess.
  6. Cook: Cover and cook the apple crisp on High for 1.5 hours or Low for 3 hours. Check midway to ensure apples are not becoming too soft and adjust cooking time if necessary.
  7. Finish and Serve: Remove the paper towels and allow the apple crisp to cool slightly to stop the cooking process. Vent the slow cooker lid and keep warm until ready to serve.

Notes

  • Use Granny Smith apples for their tart flavor and firmness that holds well during cooking.
  • You can substitute pecans with walnuts or almonds based on your preference.
  • Make sure to use old fashioned oats, not quick cooking oats for better texture in the topping.
  • Covering with paper towels helps prevent condensation from making the crisp topping soggy.
  • Check the slow cooker halfway through cooking to avoid over-softening the apples.
  • This dessert is excellent served warm with vanilla ice cream or whipped cream.
