A hearty, comforting casserole that transforms the classic Sloppy Joe into a cheesy baked pasta dish, perfect for busy weeknights.

Ingredients

For the Sloppy Joe Casserole:

  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 2 cans Manwich sauce
  • 12 oz farfalle (bowtie) pasta, cooked al dente
  • 1 cup shredded Velveeta
  • 1 1/2 cups shredded Colby-Jack cheese

Instructions

  1. Preheat the oven: Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Cook the beef and onion: In a large pot, cook ground beef and onion over medium-high heat until beef is browned and onion is soft. Drain excess grease.
  3. Add Manwich sauce and pasta: Return beef mixture to the pot. Stir in Manwich sauce, cooked pasta, and shredded Velveeta. Mix until well combined and Velveeta is melted.
  4. Transfer to baking dish: Transfer mixture to prepared baking dish. Top with shredded Colby-Jack cheese.
  5. Bake: Bake for 25 minutes, until cheese is melted and bubbly.
  6. Serve: Let cool for 5-10 minutes before serving.

Notes

  • Use freshly shredded cheese for the best melt and flavor.
  • Add diced jalapeños, bell peppers, or mushrooms for variation.
  • Can substitute ground turkey or chicken for a lighter version.
  • Other pasta types like penne or rotini work well too.
